Spiced Cinnamon and Cardamom Granola

Simple cinnamon and cardamom chunky granola, naturally sweetened with honey and graced with chia seeds for some extra crunch.
Store-bought granola gets so expensive, so I figured it was time to make a simple homemade cinnamon and cardamom granola that’s good enough to eat every day. I love a cinnamon and cardamom combo to give this granola a little warmth while still being a little sweet. Some recipes use white sugar or brown sugar, but I prefer to use honey in this recipe (maple syrup works too).
Plus, adding the chia seeds to the granola means it’s one less thing for me to get out of the fridge when I’m making a yogurt bowl in the morning.
I tested out this recipe by bringing it to a bachelorette weekend by the beach and it was a hit! We had it with vanilla yogurt and fresh fruit, the perfect breakfast before spending the afternoon in the sun.

What You’ll Need to Make Spiced Cinnamon and Cardamom Granola
Granola is simple and we love that! It consists of entirely pantry ingredients. Once you feel like you’ve got the hang of it, you can customize it with nuts, spices, dried fruit (make sure to add it after it comes out of the oven) – whatever you like to make it your favorite.
Ingredients for Cinnamon and Cardamom Granola
- Old Fashioned Oats
- Honey (or maple syrup)
- Coconut Oil (I haven’t tried using olive oil or vegetable oil instead – you wouldn’t need to heat them in the microwave)
- Ground Cinnamon
- Ground Cardamom
- Kosher Salt
- Chia Seeds (optional)
Special Equipment
Nearly nada! All you need is a mixing bowl, something to stir things up with, a microwave-safe bowl, and a baking sheet since it will be baked in the oven.
I prefer to line my baking sheet with parchment paper for easy cleanup and it makes it easy to transfer the granola into a container, but that’s totally optional.
Baking Granola: 350F Over Low and Slow
A lot of granola recipes have you bake the mixture at a lower temperature for a longer amount of time to get super crispy granola. In past bakeries I’ve worked at, I learned that wasn’t totally necessary.
You can absolutely bake this cinnamon and cardamom granola at 350F and still get crispy clusters.
Plus it means this cinnamon and cardamom granola bakes faster than most, which is a plus in my book.
What to Eat with Spiced Cinnamon and Cardamom Granola
I personally eat my granola with vanilla yogurt and some fresh fruit to make a parfait and use whatever is in season. Apples or raspberries are what I gravitate toward most!
It’s also great with a splash of milk or can be sprinkled over ice cream for a dessert-style treat. And you can always just snack on it too 🙂 I’ve definitely done that.

Ingredients
3 cups Old-Fashioned Oats
1/3 cup Honey
1/4 cup Coconut Oil
1/2 tsp. Ground Cinnamon
1/2 tsp. Ground Cardamom
1/8 tsp. Kosher Salt
1 Tbsp. Chia Seeds – optional
Instructions
Preheat the oven to 350 Fahrenheit.
- In a medium-sized mixing bowl, add the old-fashioned oats (3 cups). Set aside.
- In a microwave-safe bowl, heat the honey (1/3 cup) and coconut oil (1/4 cup) in 10-second increments, stirring to combine between heatings, until the coconut oil is melted. Watch it to make sure the oil doesn’t bubble up.
- Once the coconut oil is fully melted, stir in the chia seeds (1 Tablespoon). Mixing the chia seeds with the honey and coconut oil ensures all of the chia seeds stick to the oats and don’t fall off.
- Pour the honey, coconut oil, and chia seed mixture evenly over the oats. Stir until the oats are evenly coated.
- Sprinkle the ground cinnamon (1/2 teaspoon), ground cardamom (1/2 teaspoon), and kosher salt (1/8 teaspoon) evenly over the top of the oats and stir until everything is combined and the oats are evenly coated
- On a non-stick baking tray or a tray lined with parchment paper, spread the oats evenly and bake for 10 minutes.
- Remove the tray from the oven and gently stir the mixture so it bakes evenly by folding the outside edges in toward the middle, then press/flatten the granola before putting it back in the oven
- Bake for 8-10 additional minutes, or until golden brown.
- Remove from the oven and allow to cool completely (at least 45 minutes) before stirring to break up the granola into clusters
Store in an airtight container at room temperature for up to a week, or in a sealed container in the freezer for up to 3 months. I prefer to keep it in a sealed container in the fridge and I’ve had it stay fresh for up to 3 weeks.
