When I first imagined these marbled chocolate cookies, I pictured fudge ripple ice cream. I wanted a cookie that had chocolate almost layered into the dough with beautiful swirls and texture. It took four tries, but man oh man do these cookies deliver.
They’re not quite chocolate chip cookies, but I honestly think they’re better. With marbled chocolate cookies, you get chocolate in each bite and the texture is perfectly smooth and delicate. Almost like a sugar cookie.

What You’ll Need to Make Marbled Chocolate Cookies
Ingredients for Marbled Chocolate Cookies
- Semi-Sweet Chocolate
- Unsalted Butter
- Brown Sugar
- An Egg
- Vanilla Extract
- Kosher Salt
- Baking Soda
- All-Purpose Flour
These Marbled Chocolate Cookies are Wooden Spoon Approved!
Even though the recipe recommends using a hand or stand mixer, you can totally make these cookies without a mixer! If you choose to make these by hand, you’ll need a medium-to-large-sized mixing bowl and a wooden spoon or stiff spatula.
Allow the butter to soften to room temp and you’ll have no trouble.
Getting The Signature Look – Marbled Chocolate Cookies
While most cookies use chocolate chips, we’re actually going to melt those chips down before adding them to the dough. By using melted chocolate you run the risk of turning these into chocolate cookies – no marbling present. Luckily, I did some very thorough testing to find the best way to get those signature ripples that characterize these marbled chocolate cookies without over-mixing them and coming out with chocolate dough.
Start by giving your melted chocolate a couple minutes to sit at room temperature before adding it to the dough. Make sure you melt the chocolate before starting the dough and you should have no problem with the temperature of your chocolate.

Be delicate, work slowly, and you’ll be just fine!
You’ll be tempted to keep folding, but don’t fall for it. You want to stop folding as soon as it starts to resemble fudge ripple ice cream. If you keep going, you’ll get chocolate cookie dough (not necessarily a bad thing, but not what we’re going for).

Ingredients
- 1/4 c. Semi-Sweet Chocolate Chips (melted)
- 16 Tbsp. Unsalted Butter (softened to room temperature)
- 1 c. Brown Sugar (packed)
- 1 Egg
- 1 tsp. Vanilla Extract
- 1/2 tsp. Kosher Salt
- 1 tsp. Baking Soda
- 3 c. All-Purpose Flour
Instructions
- In a microwave-safe bowl, melt the semi-sweet chocolate chips for 1-minute increments in the microwave – stirring between increments – until fully melted. Set aside.
- Using the paddle attachment on a stand mixer or using a hand mixer, cream together the butter and brown sugar until light and fluffy. *
- Stop the mixer and scrape down the sides of the bowl with a spatula, then add the egg and vanilla and mix until there are no shiny streaks in the batter.
- Stop the mixer and sprinkle the kosher salt and baking soda evenly over the top of the dough then mix for 30 more seconds.
- Add the all-purpose flour to your mixing bowl and mix on low until just combined.
- Remove the mixing bowl from the mixer and drizzle the melted semi-sweet chocolate evenly over the dough.
- Delicately fold the chocolate into the batter with a wooden spoon or stiff spatula – being very careful not to over-mix. You’ve folded the chocolate in enough when it starts to resemble fudge ripple ice cream.
- Use a 1 Tbsp. cookie scoop to portion out the cookies and place them on a tray or plate that can fit in the refrigerator. Once all the dough has been scooped, gently pat each ball of dough into a disk about ½ an inch wide.
- Chill the dough, covered, in the fridge for two hours.
- About a half hour before baking, preheat your oven to 350 degrees Fahrenheit.
- Bake the cookies on a lined baking sheet (placed about 1.5 inches apart) for about 13 minutes. Allow to cool before enjoying.
Notes
* If you are making these by hand, you will do this in a medium to large bowl with a stiff spatula or wooden spoon.
