This baked brie with jam bites recipe is a tried and true crowd-pleaser and it’s been with me for years. I’ve brought it to potlucks, family reunions, game nights – you name it! Every time, it’s been a hit.
Because they’re bite-size and portioned out, they’re easier to share and eat than baked brie with jam and crackers. There’s no awkward scooping of melted brie or broken crackers, which makes this an automatic win in my book!
The use of buttery biscuit dough has a very similar (but better, in my humble opinion) rich flavor to brie with jam and crescent rolls. A lot of recipes will use something like puff pastry or wonton wrappers for their baked brie with jam bites, but I like the nostalgia of the biscuit dough for these.

What’s So Great About These Baked Brie with Jam Bites?
Baked brie with jam is the perfect sweet yet savory treat. Plus, you’ve got the added bonus of being able to make it up to a day ahead and throw it in the oven before you’re in the presence of company.
These baked brie with jam bites look and taste way more impressive than they actually are.
There are tons of different jams/jellies you could use in your baked brie with jam bites, which makes this recipe super versatile. I used strawberry jam for this recipe simply because strawberries are in season, but apricot is my personal favorite!
The jelly/jam flavor you use is entirely up to you, but apricot, fig, or strawberry are my top recommendations.
What You Will Need to Make Baked Brie with Jam Bites
Ingredients
I like to break-down my ingredients by the general area they can be found in the grocery store.
Dairy:
- Brie with rind on (check out this article from Robust Kitchen for help choosing the right brie. I prefer not to use a double- or triple-creamed brie)
- Unsalted Butter
- Pre-made Grand Biscuits, 8 count (Pillsbury works great (not sponsored))
Pantry:
- Jelly, Jam, or Fruit Preserves (strawberry, apricot, and fig all work great)
- Garlic Powder
- Kosher Salt
- Flour (to keep dough from sticking to rolling pin and cutting board)
How to Pinch the Dough Closed for Perfect Baked Brie with Jam Bites
Pinching the dough closed around the encased brie and jam or jelly is the only “difficult” part of this recipe, but I promise you’ll get the hang of it. Once you’ve rolled out your dough balls and filled each one with a teaspoon of jam and a chunk of brie in the center, you’re going to do the following:
- Take the top and bottom edges of the dough in your fingers and lift them until they meet over the top of the fillings.
- Pinch the edges together with your fingers until they don’t come apart.
- Working quickly, lift the left and right edges of the dough until they also meet over top of the fillings and previously pinched edges.
- Pinch the edges together with your fingers until they don’t come apart and do your best to fold in any edges of the dough that are sticking out.
- Try your best to seal any edges of the dough where jelly/jam could escape and then quickly place seam-side-down in your skillet.
Placing the dough seam side down in the pan keeps the dough from popping open while baking.

Honestly, my favorite part of these baked brie with jam bites is being able to share them. And I say that knowing full well how cheesy that sounds. But it’s always a hit and I can’t remember a time when there has been a single bite left in the skillet by the end of the night.

Ingredients
16.3 oz. Pre-made Grand Biscuits, 8 count (Pillsbury works great (not sponsored))
1/3 cup Jelly, Jam, or Fruit Preserves (strawberry, apricot, and fig all work great)
8.8 oz. Brie with rind on (cut into 16 cubes)
2 Tbsp. Unsalted Butter
1/2 tsp. Garlic Powder
1/2 tsp. Kosher Salt
Flour (to keep dough from sticking to rolling pin and cutting board)
Instructions
- Preheat oven to 375°F or the temperature advised on biscuit packaging.
- Remove the biscuit dough from the packaging and slice each biscuit in half, then roll each half into a ball with the palms of your hands. You’ll have 16 balls of dough.
- Shape each ball of dough into a disk with a rolling pin until it is about 4″ across, lightly dusting your cutting board and rolling pin with flour as needed to keep the dough from sticking.
- Place 1 tsp. of jelly or jam in the middle of each disk, followed by 1 cube of brie. Pull up the edges of the disk to fully encase the brie and jelly, then pinch with your fingers to seal. Place seam side down in the baking dish starting with the outer edge of the dish and working your way towards the middle. It’s okay if the dough pieces touch.
- Melt the butter (2 Tablespoons) in the microwave and then brush over each dough piece with a pastry brush. Sprinkle garlic powder and kosher salt evenly over the dough pieces (sprinkle from a higher height for a more even distribution).
- Bake for about 20 minutes or until the tops are firm and golden brown.
- Let cool before serving.
Notes
This recipe can be made ahead and placed in the fridge, covered. Just pop the dish in the oven about 30 minutes before serving!
