Peanut Butter Granola on Yogurt with Berry Jam

Five-ingredient peanut butter granola flavored with creamy peanut butter and roasted peanuts and sweetened with maple syrup.

Ingredients

  • 3 c. Old-Fashioned Oats
  • 1 c. Peanuts
  • 1/4 c. Coconut Oil
  • 1/4 c. Creamy Peanut Butter
  • 1/2 c. Maple Syrup

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line a sheet tray with either parchment paper or a silicon baking mat.
  2. In a medium sized mixing bowl, add the old-fashioned oats and peanuts. Give the bowl a gentle few shakes to mix the peanuts and oats together.
  3. In a microwave safe bowl, add the coconut oil and creamy peanut butter and microwave for 30 seconds. Remove from the microwave and stir until combined.
  4. Add the maple syrup to the peanut butter and coconut oil mixture and stir until completely combined. Be sure to stir thoroughly otherwise the maple syrup will sink to the bottom.
  5. Pour the maple syrup, peanut butter, and coconut oil mixture into the medium sized mixing bowl with the oats and peanuts and stir together with a wooden spoon until the oats and peanuts are evenly coated.
  6. Evenly spread the granola mix onto the lined sheet tray and press flat with your wooden spoon.
  7. Bake for 18-20 minutes and allow to cool for another 20 minutes out of the oven before gently breaking the granola into clusters with your hands.
