Marbled Chocolate Cookies

Soft cloud-like marbled chocolate cookies with a rich brown sugar dough and delicate semi-sweet chocolate ripples in every bite.

Ingredients

  • 1/4 c. Semi-Sweet Chocolate Chips (melted)
  • 16 Tbsp. Unsalted Butter (softened to room temperature)
  • 1 c. Brown Sugar (packed)
  • 1 Egg
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Kosher Salt
  • 1 tsp. Baking Soda
  • 3 c. All-Purpose Flour

Instructions

  1. In a microwave-safe bowl, melt the semi-sweet chocolate chips for 1-minute increments in the microwave – stirring between increments – until fully melted. Set aside.
  2. Using the paddle attachment on a stand mixer or using a hand mixer, cream together the butter and brown sugar until light and fluffy. *
  3. Stop the mixer and scrape down the sides of the bowl with a spatula, then add the egg and vanilla and mix until there are no shiny streaks in the batter.
  4. Stop the mixer and sprinkle the kosher salt and baking soda evenly over the top of the dough then mix for 30 more seconds.
  5. Add the all-purpose flour to your mixing bowl and mix on low until just combined.
  6. Remove the mixing bowl from the mixer and drizzle the melted semi-sweet chocolate evenly over the dough.
  7. Delicately fold the chocolate into the batter with a wooden spoon or stiff spatula – being very careful not to over-mix. You’ve folded the chocolate in enough when it starts to resemble fudge ripple ice cream.
  8. Use a 1 Tbsp. cookie scoop to portion out the cookies and place them on a tray or plate that can fit in the refrigerator. Once all the dough has been scooped, gently pat each ball of dough into a disk about ½ an inch wide.
  9. Chill the dough, covered, in the fridge for two hours.
  10. About a half hour before baking, preheat your oven to 350 degrees Fahrenheit.
  11. Bake the cookies on a lined baking sheet (placed about 1.5 inches apart) for about 13 minutes. Allow to cool before enjoying.

Notes

* If you are making these by hand, you will do this in a medium to large bowl with a stiff spatula or wooden spoon.
