Bright and flavorful blueberry peach cobbler for one. Lightly sweetened blueberry and peach filling topped with a honey biscuit-like topping makes this the perfect summer treat.

Ingredients

Blueberry Peach Filling

  • 1 teaspoon cornstarch
  • 1 Tablespoon granulated sugar
  • 1 pinch kosher salt
  • 1/2 a peach – diced (or half a cup frozen peaches)
  • 1 Tablespoon blueberries
  • 1/2 teaspoon Lemon Juice

Honey Biscuit Topping

  • 3 Tablespoons all-purpose flour
  • 1 pinch kosher salt
  • 1/4 teaspoon baking powder
  • 1 Tablespoon milk
  • 1 teaspoon honey
  • 1 Tablespoon unsalted butter – melted

Instructions

Preheat your oven to 350 degrees Fahrenheit.

make the blueberry peach filling

  1. In a small bowl or mixing bowl, add the cornstarch, granulated sugar, and kosher salt. Stir to combine.
  2. Add the diced peaches and blueberries to the bowl and toss in the mixture until evenly covered.
  3. Pour the mixture into a 6-ounce ramekin and then pour the lemon juice evenly over the mixture.

make the honey biscuit topping

  1. In a small bowl (you can use the same one you used for making the filling if you rinse and dry it), combine the all-purpose flour, kosher salt, and baking powder.
  2. In a microwave-safe dish, melt the butter. Once melted, add the milk and honey to the butter and stir to combine.
  3. Add the wet ingredients (butter, milk, honey) into the dry ingredients (flour, salt, baking powder) and stir until you get a well-combined biscuit dough. Once fully combined, stir vigorously for an additional five seconds. It should have the consistency of a thick cake batter.
  4. Add the biscuit batter on top of the fruit in your ramekin and lightly press the biscuit batter into the fruit so that the batter is even with the top of the ramekin.
  5. Lightly sprinkle the top of the biscuit dough with granulated sugar.
  6. Place the ramekin on a baking tray and bake for 20 minutes, or 30 minutes if using frozen fruit.

Allow to cool slightly before enjoying and (optional) top with vanilla ice cream 🙂
